Summer-Fresh Lime Vinaigrette

This light citrus dressing has a refreshing taste that says “Summer’s on its way!”

Summer-Fresh Lime Vinaigrette:
⅓ c. (80 mL) olive oil
¼ tsp. (1.25 mL) coarsely ground pepper
¼ tsp. (1.25 mL) chili flakes
Finely grated rind and juice of 1 medium lime (see Note)
Combine in bottle, shaking well. Pour over salad and serve at once. Just the thing for Rainbow Veggie Salad!
You can’t see it, but that’s a lime I’m grating!

Note: As illustrated, I always use a handheld fine-grate Microplane grater for orange, lemon, and lime rinds. Microplane guarantees the blade’s sharpness for life! This helpful gadget is one of my favorite kitchen tools.
