Finnish Rutabagas


Here’s another excellent way to prepare rutabagas for your Thanksgiving feast!

Finnish Rutabagas:
To Prepare the Rutabaga Mash: 
1 large rutabaga, peeled and diced to equal 4-to-6 c.
1 tbsp. granulated sugar
¼ tsp. pepper
1 tsp. nutmeg
¼ c. heavy cream
2 eggs, slightly beaten
To Prepare the Topping:
¼ c. fine, dry bread crumbs
1 tbsp. melted butter or margarine
Preheat oven to 350 deg. F. Bring diced rutabagas to the boil in lightly salted water. Immediately reduce heat, simmering 15 min. or until tender. Drain and mash hot rutabagas. Combine remaining ingredients (except those for topping) and blend thoroughly with hot rutabagas. Transfer rutabaga mixture into a greased, 2-quart casserole and set aside. Combine topping ingredients, sprinkling over rutabagas. Bake 45-to-60 min. Serves 8.
