Ginger-Spiced Carrots with Apple

This dinner side dish came to me as I grabbed the first few things I found in the fridge. Whenever you invent a dish, jot it down for posterity! Later on, your family and friends will thank you for it.
Ginger-Spiced Carrots with Apple:
1 tbsp. butter or margarine
1 tbsp. apple juice 
3 large carrots, peeled and angle-sliced
1 apple, peeled, cored, and cubed
2 tbsp. fresh, minced ginger
3 tbsp. dark brown sugar
Melt butter or margarine in microwave oven for 10 sec. in small microwave-safe casserole. Add apple juice, stirring to combine. Mix remaining ingredients together. Cover tightly, allowing only a small vent for steam to escape. Bake at high power 8-to-10 min. Drain off excess liquid. Serves 4.

Ready in 8-to-10 min., the apple is soft
while the carrots retain a slight crunch
